First Brownie in a Mug

I read a great recipe and thought I pinned it, but it is not saved. Maybe it was someone's blog? So here is what I started with today. It needs some more tweaking.

1 TBSP whole wheat flour = Normal flour
1 TBSP sugar (do not substitute) = 4 splendas
1 TBSP unsweetened cocoa
a pinch of baking soda
a pinch of salt
1 TBSP of low fat vanilla yogurt, add more if needed to blend the mixture= 2 TBSP

+ Vanilla extract

It was like a giant sponge, not sweet enough and a little sour. I am going to make a 2nd one.


*Edit* 2nd try

1 tbsp flour
1 tbsp cocoa
1 tsp sugar
1 tsp honey
Pinch of salt
Pinch of banking soda
1 heaping tbsp vanilla quark
2 Splendas
1 tsp light peanut butter

1 minute and 17 seconds in microwave.

The batter tasted sweeter than the finished product.

Texture is better.

Next time: 2 more Splenda packets, Stop microwave at 1 minute

  1. Sounds interesting. I've made cookies and cakes in a mug but haven't attempted to make them healthy. :P

  2. I've only ever tried cakes and cupcakes in a mug and never played with the ingredients. I should try more :)
