Recipe Review
I picked the recipe for this month for the Recipe Club I'm a part of. I'm embarrassed to admit I didn't make the first 2 recipes. The months just seemed to fly by and I didn't get to it! I thought to finally try something from pinterest. Pizza Casserole It seemed to be something family friendly and I love casseroles.
I had to adjust the recipe to 'Belgian standards.' I had no idea it would be IMPOSSIBLE to find pepperoni. I went to several butchers and a big grocery store deli and no one has it. One day I'll find it...so ours had salami instead. I followed the suggestions and added onion and garlic to the meat. I didn't have the seasoning it called for, so I used some mix I had (Proviencaalse kruiden). I first though my jar of sauce wouldn't be enough, so I added a can of basil tomatoes (Which the hubby said was the only part he didn't like) I did 250g (uncooked) noodles and that was too much! 500g hamburger (gehakt) 250g mozzarella. Someone recommended ricotta, but I didn't have any, so I did a heaping spoon of coconut milk and about half a cup of something like sour cream (volle verse kaas) into the meat. For us it was a success! I waited to so long to make it because I did not have the pepperoni, but now that I tried it with salami and another sausage, I realize it is tasty with any sort.
I already made this a 2nd time and added mushrooms to it. I can see it's gonna be a favorite of mine!
